Danish Puff Chop

- 2 Tablespoons butter
- ⅓ cup flour
- ⅔ cup milk
- 1 egg
- 1 small onion
- ½ cup grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon pepper
- 4 pork chops

- Preheat oven to 350 degrees.
- In a small saucepan over low heat melt butter.
- Add flour. stir.
- Add milk. Stir.
- Cook until very thick. Keep stirring.
- Add egg and cook over low heat "beating like fury."
- When shiny-thick, remove from heat and add remaining ingredients.
- Season both sides of each pork chop with salt, pepper, and sage.
- Sear one side in a skillet over high heat.
- Place each seasoned pork chop on a parchment lined cookie sheet seared side up.
- Add a scoop of the batter on top.
- Bake in preheated oven for 25 minutes or until internal temperature is 170 degrees.
