Cornbread

- 1 cup all purpose flour
- 1 cup yellow cornmeal
- ¼ cup white sugar
- ¼ cup brown sugar
- 1¼ teaspoons salt
- 2 teaspoons baking powder
- 1 cup milk
- 1 egg
- ⅓ cup vegetable oil
- ½ teaspoon vanilla
- Preheat oven to 400 degrees F. Grease a 9 inch round cake pan, if using or preheat cast iron pan in oven.
- In a bowl combine the flour, cornmeal, sugars, salt and baking powder. Whisk well.
- In a separate smaller bowl combine milk, egg, vegetable oil and vanilla. Mix well.
- Add the milk mixture to the flour mixture. Gently fold until everything is wet.
- Let sit for 5 minutes.
- If using a cast iron pan grease lightly then add the batter.
- Bake for 20-25 minutes.
