Our busy season has already started! We have soccer, piano, volleyball and gymnastics at night during the week making it hard for dinner. Only some of us are home for dinner or we are eating in the car on the way or between places. For the next 8 weeks dinner time at my house is crazy and hard. Crock pot meals make easy recipes as well as one dish meals. One of our favorite one dish meals is this Taco Skillet Dinner.
This taco skillet dinner is so versatile. It can be eaten on a bed of lettuce, with chips or wrapped in a tortilla which is great for on the go. I love the fresh avocado, onions and sour cream on the top with the crunch of lettuce on the bottom.
Taco Skillet Dinner
Ingredients
- 1 pound ground beef
- 1 onion, diced
- 1 envelope taco seasoning
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes with green chilis
- 2 cups cooked rice
- 1 cup water
- 1 cup shredded cheese (or more if you like it extra cheesy)
- 1 avocado, sliced
- Green onions, diced
- Sour cream
- Shredded lettuce
- Tortillas (if wrapping as a burrito)
Directions:
- Cook rice to yield 2 cups cooked rice.
- In a skillet brown the ground beef with one diced onion. Drain.
- Add one envelope taco seasoning, drained and rinsed black beans, diced tomatoes, rice and water. Stir to combine. Simmer on low for 5 minutes stirring occasionally to absorb most of the water. If it looks too dry go ahead and add a little more water.
- Sprinkle with cheese and cover with a lid for an additional 2 minutes on low/warm to melt the cheese.
- In the middle of a tortilla layer shredded lettuce, beef taco filling, sliced avocado, sour cream, and green onions. Wrap into a burrito and enjoy.
This is also good as a taco salad without the tortilla or as a dip with chips for a party or football season. My kids LOVE this for dinner. I love that I can prep everything early in the day when most of my kids are in school. It makes it easy to wrap in tortillas to take on the go for those of us leaving for the night. For those staying at home it is easy to compile their dinner once Dad gets home. I think he appreciates the prep work the most.
