Easy Peach Pie

It is peach season! One of my trees is producing large beautiful peaches that are ready to be picked. My girls helped me pick a few and wanted to make an easy recipe. We decided to make Easy Peach Pie. This recipe can be prepped and in the oven within 15 minutes! The peaches can easily be prepared by using a trick I’ll share, the butter/flour/sugar mixture is combined in a food processor and the crust is premade. Put it all together and it is ready to cook. The cooking and cooling time is long. It will be tempting to eat it hot, but if you wait until it is completely cooled it will not be so runny.

Easy Peach Pie

Ingredients:

  • 2 1/2 lbs fresh peaches, peeled, pitted and sliced
  • 1/3 cup all-purpose flour
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup very cold butter
  • 1 heaping Tablespoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon fruit fresh
  • Pastry for a 9 inch double pie crust
  • Egg
  • 1 Tablespoon sugar

Directions:

  1. Peel, pit and slice peaches. To easily peel peaches, dip them in boiling water for 30-60 seconds and then plunge them in ice cold water. This easy peach pie can be in the oven within 15 minutes. Use fresh peaches and a premade pie crust. Your guests will ask for the recipe!

  4. Place one crust in the bottom of a 9 inch pie plate. Add half the peach mixture then add half the crumb mixture on top. Add the last of the peaches next and then the last of the crumb mixture.   5. Roll the remaining crust into an 11-inch circle. Cut into 1-inch strips. I used this fun pastry tool to get wavy lines. Lay 6 strips over the top of the pie filling. Weave the remaining 5 strips to form a lattice top. Using a pairing knife cut off the excess dough.   6. Using only the whites of an egg brush across the lattice top. Sprinkle with 1 Tbsp sugar. This easy peach pie can be in the oven within 15 minutes. Use fresh peaches and a premade pie crust. Your guests will ask for the recipe!
  7. Place on a lined cookie sheet to catch the drippings. Bake at 450 degrees F for 15 minutes. Drop the temperature to 350 degrees F for 30 minutes. Turn off the oven and leave the pie there for about 90 minutes or until fully cooled and set.
  8. Top with whipped cream or ice cream and enjoy.

    Oh my gosh….it’s 90° outside where I’m at and I’ve got this pie in my oven now we just bought 3 big bags of peaches at the lake over the weekend….I showed this pin to my hubby and no words had to be spoken….I immediately went to the kitchen.. what an easy recipe! !!!.I’ll let you know the out come!

      It is sold in my store by the canning supplies. It keeps the fruit from browning.
