Some of us like mushrooms, while others are not so fond of them. We occasionally cook with them and this is one of those occasional recipes.
Ingredients:
4 potatoes, sliced
5 small mushrooms, sliced
1/4 yellow onion, diced
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
4 Tablespoons chili pepper infused olive oil
1 clove garlic, minced
1 teaspoon dried parsley
Directions:
Slice the potatoes and mushrooms. Dice the onion.
In a medium bowl add all the ingredients. Stir well to combine.
Cut a large piece of foil. Add the potato mixture to the middle of the foil. Wrap up completely sealing all edges.
Grill for 20 minutes flipping halfway through.
It is as easy as that! The next time you are grilling and need an easy side dish to cook right along side your protein give these potatoes and mushrooms a try.

I made these for a camping trip this weekend. Very yummy! Turned the foil a few times.
