Fresh corn on the cob is never turned away in our home. My Little Chefs will eat and eat as much of it as we allow them. A friend of mine taught me how to freeze fresh corn. I didn’t know it was a simple task and an easy recipe. When we have farmer stands of corn on corners and in parking lots we stop by and get an abundance. Once we get home the work begins!
How to Freeze Fresh Corn
Supplies Needed:
- Fresh corn (8 cups corn cut off cob)
- Bundt pan or 9×13 pan
- Knife
- Sauce pan
- 1/2 Tablespoon salt
- 1 Tablespoon sugar
- 1/4 stick butter
- 2 cups water
- Cookie sheet
- Freezer bags
Directions:
- Everyone gets to work shucking the corn but do not remove the stem.
- Get out a 9×13 pan or I prefer a bundt pan. Stand one shucked ear of corn in the center on the stem. Using a knife, carefully cut the kernals. They will magically land in the clean pan! The stem will help you stop the knife before hitting the pan. I like the bundt pan even better because the stem will fit into the hole giving more stability to the corn making it easier for an older Little Chef to cut. This is not a task I will allow my little ones to try.
- In a pan combine the water, salt, sugar and butter. Once the water has come to a boil immerse the ears of corn and cook for 5 minutes.
- Transfer the corn to an ice bath.
- Pour the corn out onto cookie sheets to cool.
- Once cool transfer the corn to freezer bags or containers and freeze. Now you have that wonderfully tasting corn for a later date!
