Whenever I BBQ I always think to myself, what can I cook as a side dish that requires the grill? Why leave a big open space on the grill when you can fill it with something else that smells delicious! Cooking in foil is one of my favorite ways to make easy recipes. All those delicious juices are trapped inside the foil marinating whatever is inside.
Cooking in foil makes clean up a breeze. Just throw away the foil and you have one less pan to scrub. That is always a good thing in my house!
These Herbed Sweet Potatoes are so good! All the kids gave this recipe two thumbs up to make all summer long!
Herbed Sweet Potatoes
4 servings
Ingredients:
1/2 tsp dried rosemary
1/2 tsp rubbed sage
1/2 tsp dried basil
1/2 tsp dried thyme
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 c butter
2 Tbsps chili pepper infused oil
2 sweet potatoes
Directions:
- Peel the sweet potatoes.
- Dice sweet potatoes into 1″ cubes.
- Microwave sweet potatoes for 2 minutes. This is to get a jump start on the cooking!
- Cut a large piece of foil.
- Brush a square in the middle of the foil with chili pepper infused oil. I like to make sure the potatoes do not stick and I love just a hint of the chili pepper.
- Add potatoes on top of the oil.
- Cut butter into small pieces and place on top of potatoes.
- Mix all the dry seasonings/herbs together in a small bowl.
- Add seasoning on top of potatoes.
- Create a foil packet by tightly wrapping the foil around the potatoes.
- Tear off another piece of foil and wrap again (seam side down) around the packet. This is to ensure all the juices stay trapped inside.
- Grill for 10 minutes then flip the packet. Grill for another 10 minutes.
- Enjoy while warm.
Next time you are grilling your favorite meat, wrap up these Herbed Sweet Potatoes in foil and toss them on the grill at the same time.
